Healthy Chicken Tortilla Soup

This morning I was going to do a post about Brene Brown and all the reasons why I love her and aspire to be like her but it's a cold rainy day and I'm not feeling very motivated. It requires a lot brain power to do Brene justice so that one is going to have to wait. So instead of Brene, I decided to share one of my favorite soups that I make. I know - going from Brene Brown to soup...that's a leap but hey it is a soupy kind of day! The kind where you want to curl up under your favorite blanket, light a fire and read a book or binge watch Netflix. Let's be real people!

Many of you probably make Chicken Tortilla Soup and have a recipe that you like but I promise you, this one is worth making. Not only is this soup super tasty and healthy, but it also only takes a few minutes to make! This one is on constant rotation in our home during fall and winter and my daughter even requests it #winning! I hope you enjoy it as much as we do!

Healthy Chicken Tortilla Soup

One Rotisserie or whole chicken cooked (I always get a rotisserie chicken, I never have time to cook a whole chicken)

2 tsp minced garlic

1 tsp ground cumin

1/2 tsp celtic sea salt (if you use low sodium chicken broth. otherwise might need 2 tsp)

1 large box organic chicken broth (you can add extra if you want - approx another cup).

1 teaspoon chili powder

2 lemons (or about 3-4 tbsp lemon juice) *the lemons are key for the flavor of this soup

2 cups chunky salsa – I buy fresh pre-made salsa in the produce section of the grocery store

that has onion and cilantro in it (buy two 8ox containers)

1 can black bean (strained) and 1 can of corn (optional)

1-2 tbsp of avocado oil

Topping: Optional

Blue corn tortilla chips (we buy the beanitos chips), cheese, and sour cream for optional garnishes

Lots of avocado for the top


Shred Chicken and put to the side. In a large soup pot, add avocado oil, garlic, cumin, salt and chili powder, and throw chicken on top and mix together. Add in salsa, lemon juice, black beans, corn and stir. Then add the chicken broth, cook on low for about 30 minutes, and let the flavors soak in. Takes 10 minutes to make!  Enjoy!
