I'm in a food rut, sound familiar?

I don't know about you but I suffer from the Sunday scaries. Each Sunday it feels like a sprint of all the things that I need to do to get ready for the week ahead. It definitely is not a day of rest, it's a day of anxiety! Sunday usually starts with us going to church, then we usually hit Traders Joes, Costco and Whole Foods. We come home and then I start laundry, tell my daughter she needs to work on homework and practice her guitar which also gets me groans and lots of excuses. I try to find time to work out, half the time I need to run another errand that is usually a trip to Target and then I am having to think about what to make for dinner. Damn that dinner thing! It's always there, someone it always needing to be fed and it's usually me having to figure out what we are going to eat! I'm in a major food rut at the moment and feel like I make the same things all the time which is monotonous and boring but it is what it is. I don't have time for elaborate meals or extensive meal prep when I get home from work. I try to adopt the attitude of what is easy for me to make, healthy and did I say easy? It has to be easy!

So here we are, it's Sunday morning and I am trying to think about what I want to eat for dinner the rest of the week. I don't know what I am going to want to eat on Wednesday! I don't even know what I want for lunch today. I'm burned out on what I have been making and so is my family..

So I was super happy when my friend texted me the other day. "Hey thought of you, made this for the family and everyone loved it - it was so easy!" I took a look at it and it was a one skillet dinner - it looked delicious, healthy AND EASY! Sign me up, I am all about easy.


I gave it a try and of course modified it to make it even easier. I used the microwave Seeds of Change Quinoa Brown Rice packet to make the cook time quicker. I'm all about a meal that takes me less than 10 minutes to make and loved using lots avocado as a topping and also cherry tomatoes and cucumber. You can also use greek yogurt as a topping. Thankfully my family loved it and this will become part of our regular rotation. Hopefully this helps each of you this week with one less meal to try to think of for you or your family. It's also great as leftovers. Enjoy!
